If you’ve been looking for an excuse to visit your local asian grocery store then allow me to introduce this Asain Bowl! Simple to make and full of flavor, you really can’t go wrong!

Asian Bowl with Quinoa, Veggies, and Soy Ginger marinated Cod
Recipe:
Marinade:
fresh ginger
olive oil
soy sauce
Ingredients:
2 cod fish filets
1 cup quinoa (prepare as directed)
Stir-fry Veggies:
Shitake mushrooms
2 red bell peppers
2 green bell peppers
1 red onion
3 stalks celery
1 can water chestnuts
Cold Veggies:
1 jalapeno pepper
red cabbage
1 cucumber
2 radishes
Directions:
Marinate fish with equal parts olive oil, soy sauce, and about 1″ cube of sliced fresh ginger and set aside.
Cook 1 cup quinoa as directed.
Chop up all vegetables.
Stir-fry vegetables with 1-2 tablespoons of teriyaki sauce. Add water chestnuts about 10 minutes after cooking other vegetables.
Take fish out of marinade and pan fry 3-4 minutes on either side.
Build your bowl by layering quinoa, 1 tablespoon teriyaki sauce, stir-fried veggies, fish, cold veggies.
Add sriracha or soy sauce to taste!
Optional – Add a layer of fresh spinach first, and also add cilantro and thinly sliced carrots!
