Quick and Easy Dinner Idea with Litehouse Foods

As I mentioned in my last post, I’ve been slowly getting back to my regular lifestyle after being out of commission for pretty much my entire first trimester of pregnancy. One of the many things I had given up on was cooking, and anyone who knows me or follows me on Snapchat knows how much I love to cook healthy meals for my family. Tom even said he forgot how to cook because he was getting so spoiled with the gourmet meals I’ve been making since I’ve  working from home.

So when the opportunity to work with Litehouse Foods came, I was starting to feel like myself again and really excited to get back in the kitchen and create something unique. When I say gourmet – it is sort of tongue in cheek because I don’t do ‘fancy’ cooking. I don’t believe you need to spend hours slaving away in the kitchen to get amazing results. If you don’t already know my rules for cooking, they are: it should be quick, easy, and the ingredients need to be really fresh. What I love about Litehouse salad dressing is it is extremely fresh, located in the refrigerated section of the grocery store. Being refrigerated makes a big difference in the taste, the flavors and herbs really stand out.

My dinner took no time at all to prepare and cook, and everyone absolutely loved it. The Jalapeño flavor in the dressing wasn’t too spicy but it added a ton of flavor.

Quick Dinner Idea:

Jalapeño Ranch Roasted Veggies and Herb Crusted Baked Chicken

Roasted Veggie Side Dish

1 bag small red potatoes

1 bunch carrots – (bonus points for colorful carrots)

1 bottle Litehouse Foods Jalapeño Ranch dressing

chopped-veggies

Directions: 

Wash veggies, cut carrots, and quarter red potatoes

toss-vegetablesToss with Ranch Dressing to Coat (be sure to save at least 1/4 bottle for use after) coated-veggiesBake in preheated 400 degree oven for approximately 35 minutes or when potatoes are cooked through.

Baked Herb Crusted Chicken 

Ingredients:

chicken breast

1 bottle Litehouse Foods Jalapeño  Ranch dressing

herb bread crumbs

Directions:

Wash and pat dry chicken breast

Coat with ranch dressing then bread crumbs

Bake in preheated oven at 350 for 20 minutes on one side, then flip and cook for another 10 minutes on the other side until chicken is cooked through and golden brown.

Top with additional Ranch dressing, chopped cilantro and parsley.
