Hungry for something really hearty on a cold winter’s day? Try my take on Shepherd’s pie. I first tried and fell in love with Shepherd’s Pie way back when Tom and I were working together but not yet admitting we had a thing for each other. We had a work Christmas party at an Irish Pub and they served it, with all of the rich and flavorful meat and veggies on the bottom, and creamy whipped mashed potatoes on top. As usual my first thought was – I can make this at home!
My favorite recipe for traditional shepherds pie is this one, but in this video I share my version which I have tweaked to make a little healthier. Trust me though, it is just as good.
The second recipe in the video is a great side dish or lunch dish. I’m obsessed with beets, and that is a good thing because here are some of the benefits: high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). They also contain the B vitamin folate, which helps reduce the risk of birth defects
